Tomahawk STEAK and Stretchy CHEESE, it’s Heaven on Earth!
One of my favorite things is steak, a good second is cheese! Today I put them both together as and experiment to find out the best combination and man, I am so glad I did. The results were amazing and most important making this sous vide makes it easy.

Salt
2 tsp of Garlic Powder
2 tsp of Onion Powder
1 tsp of Smoked Paprika
1/2 tsp of Chili Powder
1/2 tsp of Cayenne Pepper
1 tsp of Black Pepper
Cheese Sauce
300g Whole Milk
213g Swiss
87g Aged Cheddar
9g Sodium Citrate
3g Salt
Step 1
Start by seasoning your steak with a good amount of salt. Then your going to make a rub for the steak, in a bowl add 2 tsp of garlic powder, 2 tsp of onion powder, 1 tsp of smoked paprika, 1/2 tsp of chili powder, 1/2 tsp of cayenne pepper and 1 tsp of black pepper.
Step 2
Mix well and season your steak well with the rub, remember to get both sides including the edges. Once the steak is fully seasoned place it in a vacuum bag and cook it sous vide @135°F / 57°C for 2 hours.
Step 3
While the steaks are cooking make a cheese sauce, into a vacuum bag add 213g of swiss cheese, 87g of aged cheddar, 300g of whole milk, 9g of sodium citrate and 3g of salt. Cook it sous vide @167°F / 875°C for 20 minutes. Once done put everything in a blender to fully combine and your cheese sauce is done.
Step 4
Once the steaks are done take them out of the bag and pat them dry. Sear the steak by using a flame thrower to get a nice crust.
Step 5
Now all that's left is to slice them up and serve with the cheese sauce and your TOMAHAWK STEAK & CHEESE is done. ENJOY!
