$75 Loco Moco vs $5!
For being one of the most affordable dishes from Hawaii this one is a keeper! Even though it’s usually done with only a hamburger, this thing is so good that I decided to see how good it would be if we elevate it to an expensive version and boy was it good!
Ingredients
Wagyu Ribeye
Salt
Pepper
Garlic Powder
Eggs
Rice
Guga's Gravy
1 tbsp Butter
1/2 Cup of White Onions
2 Cups of Mushrooms
2 tbsp A.P. Flour
1 Cup Chicken Stock
1 tbsp Worcestershire Sauce
1 tbsp Ketchup
Salt
Pepper
Step 1
Start by seasoning your steak with salt, freshly ground pepper and garlic powder. Then bag them up to be cooked sous vide, cook the steak @135°F / 57°C for 2 hours.
Step 2
While the steaks are cooking make your gravy, in a pan melt 1 tbsp of butter, then add 1/2 cup of white onions and 2 cups of mushrooms. Cook them on medium heat for about 10 minutes, season them with salt to help them cook a little faster.
Step 3
After 10 minutes add 1 tbsp of all purpose flour and mix well to cook the flour. Then add 1 cup of chicken stock and bring everything to a simmer. Then add 1 tbsp of worcestershire sauce and 1 tbsp of ketchup. Mix well and let it reduce until it reaches the consistency you like. Finish by seasoning. with salt and pepper to taste.
Step 4
Once the steaks are done take them out and pat them dry. Sear the steaks with the flamethrower to give them a nice crust and slice up thin.
Step 5
All that's left is to plate the steak up with some rice, then add some of the gravy over top followed by a fried egg and your LOCO MOCO is done. ENJOY!
