$15 Filet Mignon Sandwich vs $150 Filet Dinner!
Today we find out if Filet Mignon belongs or doesnt belong in a steak sandwich. Should it always be served as a meal? Well today I run that experiment to see which is best.
Ingredients
Filet Mignon
Salt
Pepper
Garlic Powder
Italian Loaf bread
Asian Style slaw
Pre cut slaw
1tbsp Garlic Paste
1 Tbsp Ginger Paste
1 tbsp of Honey
2 tbsp seasoned rice wine vinegar
1/2 cup of olive oil
1 tsp Thai fish sauce
Pepper
1 tbsp of Sugar
Pickled Onion / Cucumbers
Red Onions
Baby cucumbers
2 Parts Water
1 Part Red Wine Vinegar
Add any spices you like
Step 1
Start by seasoning your filet mignon with salt, freshly ground pepper and garlic powder. Make sure to season both sides including the edges. Place them in a vacuum bag for sous vide.
Step 2
Cook the steaks sous vide @129°F / 53°C for 2 hours. While that's cooking you can prepare the other ingredients, starting with the Asian style coleslaw. In a bowl add 1 tbsp of garlic paste, 1 tbsp of ginger paste, 1 tsp of honey, 2 tbsp of seasoned rice wine vinegar, 1/2 cup of olive oil, 1 tsp Thai fish sauce, 1 tbsp of sugar and freshly ground pepper.
Step 3
Mix everything well to make the coleslaw dressing, then add it to your pre-cut slaw and mix. Now to pickle your onions and cucumbers, in a pot add 2 parts water and 1 part red wine vinegar and any other spices that you like. Bring it to a boil and then add it to your diced onions / cucumbers. Cover them and let them rest in the refrigerator for 24 hours.
Step 4
Get your Italian loaf and slice it in half, then toast it in the oven with some butter until nicely golden brown. By now the steaks should be ready, take them out and pat them dry. The sear them using the flamethrower while basting with butter to get a nice crust.
Step 5
Now time to assemble your sandwich, on the bottom loaf add whatever sauce you like, along with your Asian style coleslaw and some of your pickled onions / cucumbers. Then top it with your thinly sliced steak and your FILET MIGNON SANDWICH is done. ENJOY!
