Bone Marrow Steak Pie
Bone Marrow is something that is very butter and delicious, today I tried to make a flavorful bone marrow pie which to my surprised worked so good that you have to make it inorder to understand how amazing it is.
Ingredients
Ox Tail
Tomahawk Shank
Salt
Pepper
Bone Marrow Mashed Potatoes
4 Cups Potatoes
4 tbsp Bone Marrow
1/2 Cup Milk
Salt
Sous Vide Flavor Sauce
2 tbsp Olive Oil
1 Cup Onions
1 Cup Celery
1 Cup Carrots
2 tbsp Tomato Paste
4 Cups Red Wine
2 Cups Chicken Stock
2 tbsp Wostershire
2 tbsp Italian Seasoning
2 tbsp Garlic Paste
Step 1
Start by making the sauce for the meat. Into a pan with some olive oil add 1 cup of chopped onions, season with some salt and cook them up until they have a bit of color.
Step 2
Once they are very lightly golden brown add 1 cup of chopped carrots and 1 cup of chopped celery. Keeping it on med - low heat add 2 tbsp of tomato paste and mix everything well to caramelize the vegetables.
Step 3
Once the vegetables have a nice color add 4 cups of red wine to deglaze the pan. Mix until there is nothing stuck on the bottom of the pan and then let the wine fully evaporate. Once it begins to stick again add 2 cups of chicken stock.
Step 4
Again mix everything around until there is nothing stuck to the bottom of the pan. Once done let everything come to a simmer on medium - high heat. Once simmering add 2 tbsp of Wostershire sauce, 2 tbsp of Italian seasoning and 2 tbsp of garlic paste. Mix it up and the sauce is done.
Step 5
Season your ox tail and tomahawk shank well with salt and freshly ground pepper. Then add them to a vacuum bag with a good amount of the sauce and cook it sous vide @185°F / 85°C for 24 hours.
Step 6
In the meantime make your bone marrow mashed potatoes. In a container add a good amount of water and some salt, then place your bones in there overnight to clean out the blood from the marrow. The net day take them out and place them in the oven on broil for 10 minutes to melt the bone marrow.
Step 7
Strain the bone marrow and place it in the refrigerator to solidify. In the meantime boil 4 cups of potatoes for 15 minutes, then run them through a potato ricer to and add your bone marrow. Mix it up to completely melt the bone marrow then add 1/2 cup of milk and salt to taste. Mix it up again and its done.
Step 8
once the meat is done cooking take it out of the bag and remove all of the meat from the bones but keep al the juices. Place the bone from the tomahawk shank in the middle of the bowl and then add the meat around the bone and then re-hydrate it with the juices.
Step 9
Then layer your mashed potatoes over top of the meat. Place it in the oven to heat up and lightly brown the top of the mashed potatoes. Now all that's left is to plate, serve and enjoy your BONE MARROW STEAK PIE!
