Chinese BBQ Experiment, AKA Char Siu!
If you love Chinese food you know Char Siu which is an iconic pork that is so good you can find in every amazing Chinese Restaurant. The best part is that we can now make this at home using sous vide which to me makes it easy to do.
Ingredients
Boneless Pork Shoulder
Char Siu Marinade
5 Blocks of Fermented Bean Curd - Buy now
3 Cloves of Garlic
3 tbsp Brown Sugar
3 tbsp Honey
1 tbs Chinese Five Spice - Buy now
2 tbsp Sherry Vinegar - Buy now
2 tbsp Dark Soy Sauce - Buy now
2 tbsp Hoisin Sauce - Buy now
3 tsp Sesame Oil
Salt
Pepper
Step 1
Into a sauce pan add 3 cloves of minced garlic, 3 tbsp of brown sugar, 3 tbsp of honey, 1 tsp of Chinese five spice, 2 tbsp of cherry vinegar, 2 tbsp of dark soy sauce, 2 tbsp of hoisin sauce, 3 tsp of sesame oil, 5 blocks of fermented bean curd and salt to taste.
Step 2
mix everything well and bring everything to a boil to fully cook. Once it has reached a boil your sauce is done. Get your pork shoulder and slice it into 2 inch thick pieces. Then brush each piece with the sauce before adding it to the vacuum bag to cook.
Step 3
Cook the pork sous vide @145°F / 62°C for 24-26 hours. Once done take them out and strain the juices. Brush the remainder of your sauce over the meat then add it to your oven @350°F until it has a nice crust.
Step 4
Now all that's left is to slice them up, serve with anything you like and enjoy your delicious CHAR SIU!
