Greatest STEAK CALZONE I ever made!
Everyone loves calzone, but you dont see steak calzone very often, today I tried to give my take on this old classic. I am so glad I did as the results were amazing!
Ingredients
Wagyu Picanha MBS 9
Salt
Bacon
Shredded Swiss Cheese
Sliced Mozzerella Cheese
Pizza dough
Marinara Sauce
1 tbsp Olive Oil
3 tbsp Shallots
1 tbsp Garlic
3 tbsp chopped Basil
1 tbsp Sugar
3 cups Tomato Sauce
Salt
Pepper
Step 1
Start by making the marinara sauce. In a pan add 1 tbsp of olive oil, followed by 3 tbsp of minced shallots and 1 tbsp of minced garlic. Season it with salt and freshly ground pepper and cook them until they get some color and become aromatic.
Step 2
Once aromatic add 3 cups of tomato sauce. Mix well on medium heat and bring everything to a simmer. Then add 1 tbsp of sugar and 3 tbsp of chopped basil and mix well. Finish be seasoning with salt and pepper to taste.
Step 3
Cut your picanha into steaks going with the grain, then season well with salt. Place them in a vacuum bag to cook them sous vide. Cook them @135°F / 57°C for 2 hours. While that's cooking make your calzone.
Step 4
Spread out your pizza dough and add as much shredded swiss cheese as you like. Then place your cooked bacon on top followed by the mozzarella cheese. Close the dough and pinch the edges. Cook this in your pizza oven or regular oven on low heat until fully baked and the cheese is melted.
Step 5
By now your picanha should be done. Take it out of the bag and pat them dry, using the flamethrower sear them to make sure they have nice crust.
Step 6
Slice them against the grain. All that's left is to top your calzone with some of your marinara sauce and the picanha and ENJOY!
