Homemade Sous Vide Gyro Meat!
I love greek food! On this episode I make an AMAZING GYRO MEAT Sous Vide. This is one of the best recipes of 2018 for SURE! To go with it I also made a Tzatziki Sauce that just took this entire episode over the top. By far the best of 2018 so far!
Recomended Sauce:
Tzatziki SauceIngredients
80/20 ground beef (2 lbs)
1.5 lbs Lamb
2 tbsp Garlic Powder
2 tbsp Salt
2 tbsp Dry Oregano
2 tbsp Black Pepper
1 White Onion
Tzatziki Sauce
2 cups Greek yogurt
1 large cucumber
4 cloves garlic
1/2 Lemon
3 tbsp chopped dill
Salt
Pepper
Step 1
Start by preparing your gyro meat. Into a food processor add 1 white onion and chop it fine. Then add 2 lbs 80/20 ground beef, 1.5 lbs chopped lamb, 2 tbsp of garlic powder, 2 tbsp of salt, 2 tbsp of dry oregano and 2 tbsp of black pepper. Blend everything together until it becomes a paste.
Step 2
Pace the meat onto some plastic wrap and roll it up tight. Then transfer it to some parchment paper so that it is easier to put in the vacuum bag. Vacuum seal it and cook it sous vide @150°F / 65°C for 3 1/2 hours.
Step 4
Once the meat is done cooking, take it out and discard all the liquids. Using a large skewer, skewer the meat and pat it dry. Then sear the meat with a flamethrower to give it a nice crust all around.
Step 5
All that's left is to shave the meat off as you eat it with some tzatziki sauce and some pita bread. Enjoy your amazing homemade GYRO MEAT!
