I made the FAMOUS 1920’s Delmonico Steak!
Nothing like tasting history specially when it comes to steak. Today I made the first fine dining steak in the United States. It was from famous restaurant called Delmonico in New York city. This one is a keeper!
Ingredients
Ribeye - Buy now
1 tsp Black Pepper
2 tsp Garlic Powder
1 tsp Coriander
1 tsp Chipotle
1/2 Cayenne
2 tsp Onion Powder
Crispy Onions
White Sweet Onions
4 tbsp All Purpose Flour
1 tbsp Smoked Paprika
1 tbsp Onion Powder
1 tbsp Garlic Powder
Salt
Pepper
Step 2
Start by making your rub for the steaks. In a bowl add 1 tsp of freshly ground black pepper, 2 tsp of garlic powder, 1 tsp of coriander, 1 tsp of chipotle powder, 1/2 tbsp of cayenne powder, 2 tsp of onion powder. Mix everything well to make your rub.

Step 2
Use your rub to season your steaks on both sides. Then bag them up to cook sous vide, cook them @131°F / 55°C for 2 hours. While thats cooking make your crispy onions.

Step 3
Cut your onions into thin slices, then in a bowl add 4 tbsp all purpose flour, 1 tbsp smoked paprika, 1 tbsp onion powder, 1 tbsp garlic powder, salt and freshly ground pepper. Put your onions in a bowl then pour your flour over top. Cover the top with plastic wrap and then shake everything well to make sure every piece is fully coated.

Step 4
Fry them in canola oil @350°F, fry them up nice and quick to get them nice and crispy.

Step 5
Once the steaks are done take them out of the bag, sear them with the flamethrower while basting with butter to give them a nice crust.

Step 6
Then top your steaks with the crispy onions and your DELMONICO STEAKS are done. ENJOY!
