I tried making LOBSTER CORN DOG, here’s what happened!
I love corn dog and fair food. But the normal corn dog we all had it. Today I tried something different. I love sea food so why not try something that could be amazing. I am talking about a lobster corn dog. Will this be amazing or a complete fail? Here are the results.

Corn Dog Batter
2 cups Yellow Cornmeal
2 cups All-purpose Flour
2 tsp Baking Powder
1 tsp Baking Soda
3 cups Buttermilk
1 tbsp Honey
Vegetable oil
Eggs
Salt
Step 1
Start by making the batter for your corn dogs. Into bowl add 2 cups of all purpose flour, 2 cups of yellow cornmeal, 1 tsp of baking soda, salt and 2 tsp of baking powder, Mix everything well to combine the ingredients.
Step 2
Into a separate bowl add 3 cups of buttermilk, 1 egg and 1 tbsp of honey, again mix everything well to combine. Then add the wet ingredients to the dry ingredients and begin to mix. You do not want a runny batter, it needs to be a bit thick.
Step 3
Now that's the batter is done start de-shelling the lobster tails and removing the membrane that is on the top of the tails. Then season with salt and freshly ground pepper and place them in a vacuum bag that was lightly coated with olive oil with piece of butter on top of each tail.
Step 4
Cook the lobster tails sous vide @140°F / 60°C for 1 hour. Once they are done take them out and cut them in half long ways. Then using a skewer poke through them and dunk them in the batter ( I recommend letting them firm up a bit in the refrigerator before dunking to make sure that they don't fall apart on you).
Step 5
Once you dunk the tails in the batter, fry them up in vegetable oil until the batter is nice and golden brown.
Step 6
Now all that's left is to serve them up with your favorite sauce and your LOBSTER CORN DOGS are done!
