This piece of meat is indescribable. It is unique not only in flavor, but in texture and the way it cooks sous vide. This is an experience to be remember! In now way will you cook this every day but when you do cook it, its something special to be remember and today we had the change to experience Iberico secreto.

Iberico Secreto - Buy now

Salt

Pepper

Garlic Powder

Directions

Start by seasoning the meat with salt, freshly ground pepper and garlic powder. Then vacuum seal it and cook it sous vide @135°F / 57°C for 3 hours.

Once done take it out of the bag and pat it dry. Then using the flamethrower, sear the pork to get a nice crust all around it.

Now all that's left is to slice it up, serve and enjoy your delicious IBERICO SECRETO!
