Most EPIC Chicken and Waffles I ever made!

This is not your everyday Chicken and Waffle. It is something you can do for special occasions and I can guarantee that it will lift some eyebrows to whom ever you make it for. This thing is amazing!

Ingredients

Chicken Marinade

2 Cups Butter Milk

2 tsp Salt

2 tsp Black Pepper

2 tsp Hot Sauce - Buy now

Chicken and Waffle Dough

1 lbs Sous Vide Potatoes

1 cup Sous Vide Chicken

Corn Bread Mix

2 Cups All Purpose Flour

1 Cup Corn Mill

4 tbsp White Sugar

1 tsp Baking Powder

1 tsp Baking Soda

1 tsp Salt

2 Eggs

2 Cups of Whole Milk

6 tbsp Butter

1 Cup of Bacon Bits

1 Cup Sweet Corn

2 Cups Cheddar Cheese

1/4 Cup Green Onions

Directions

Start by making the marinade for your chicken, in a bowl add 2 cups of buttermilk, 2 tsp of salt, 2 tsp of black pepper and 2 tsp of hot sauce. Mix well and add your chicken making sure they are fully covered. Let them marinate in the refrigerator for at least 4 hours.

The next day take them out, strain them and bag it up to cook sous vide. Cook them @167°F / 75°C for 2 hours.

Once done take them out of the bag and strain them. Finish by searing them on the grill while basting with some butter to give them a nice crust.

Then chop up the chicken into small pieces to use as your filling. Add half of your chopped chicken into a bowl and season with salt and freshly ground pepper. Then add your special cheese (catupiry) and mix well and your filling is done.

Get your potatoes and place them in a bowl then drizzle some olive oil over top of them. Mix well and make sure every single one of them is coated, then season with salt, freshly ground pepper, garlic powder and some fresh rosemary. Bag them up and gook them sous vide @180°F / 82°C for 2 1/2 hours.

Once done take them out of the bag and place them in a food processor along with the rest of your chicken. Blend everything on high for about 2 minutes until it has a dough like consistency.

In a pan cook up 1 cup of chopped bacon until they are nice and crispy. Then in a bowl add 2 cups of all purpose flour 1 cup of cornmeal, 4 tbsp of white sugar, 1 tsp of baking powder, 1 tsp of baking soda and 1 tsp salt. Mix well to combine all the ingredients.

Then in another bowl add 2 eggs, 2 cups of whole milk and 6 tbsp butter. Mix well then combine the wet ingredients and the dry ones, keep mixing then add your bacon, 1 cup of sweet corn, 2 cups of cheddar cheese and 1/4 cup of green onions.

Cook up the batter in a waffle maker to finish your corn bread waffles. Now to make your chicken, get some of your dough and flatten it out, then place some of the chicken inside and pack everything into a ball.

Lastly, coat them in flour followed by dunking them in egg wash and them cover them with bread crumbs.

All that's left is to fry them up until they have a nice golden brown color and serve on top of your corn bread waffles. Top them with some maple syrup and your CHICKEN & WAFFLES are done, ENJOY!
