Sous Vide FEIJOADA a Brazilian National Dish
Today for you guys I will be making the Brazilian National Dish! FEIJOADA which is an amazing stew of bean and several types of different meats. Including, beef, bacon, cured meat, sausages and pork. But the awesome thing about feijoada is that everyone makes it a little different. So on this video I show my version where you can take the basics and make it your own.
Ingredients
4 cups of black beans
3 cups of Water
2 smoked brazilian sausages
1/4 lbs pork
1/4 lbs bacon
1/4 lbs cured meat
1/4 lbs cured pork
1/4 lbs pork shoulder smoked
1/4 lbs pork belly
1/2 cup parsley
6 gloves garlic
1 white onion
Salt
Pepper
Step 1
Start by getting your 1/2 cup of parsley, 6 cloves of garlic and 1 onion and put them into a food processor and blend them up fine.
Step 2
Now into a vacuum bag add 4 cups of black beans, 2 chopped smoked Brazilian sausages, 1/4 lbs of chopped bacon, 1/4 lbs of chopped cured meat, 1/4 lbs of chopped cured pork, 1/4lbs of chopped smoked pork shoulder, 1/4 lbs of copped pork belly, your onion mix, 3 cups of water and salt and pepper to taste.
Step 3
vacuum seal everything and cook it sous vide @180°F / 82°C for 48 hours. Once that time has passed take it out of the water bag and mix everything around. Then open it and pour it into a bowl or more traditionally a clay pot.
Step 4
Now just serve it up with some rice or anything else that you like and enjoy your amazing FEIJOADA!
