Sous Vide LOBSTER and STEAK
We went out fishing! On this Catch n Cook episode we went out for lobster in the Florida Keys. Specifically in Islamorada. We went thru a crazy storm but finally Maumau came thru and got each of us a lobster. This adventure was truly amazing and the experience will never be forgotten.
Ingredients
Lobster
Top Sirloin Steak
Smoked Salt
Pepper
Garlic Powder
Lemon
Butter
Step 1
Start by using some kitchen scissors to cut right down the middle of the lobster tail shell, then slowly opening it and pull out the meat so its sticking out of the shell.
Step 2
Then season the lobster with some smoked salt and pepper. Once done carefully place the meat back inside the shell. Lay a layer of thinly sliced lemon on the vacuum bag then place the lobster tail on top and put some butter on the lobster tail. Vacuum seal it and its ready for sous vide
Step 3
Now get your steaks and season them well with salt, freshly ground pepper and garlic powder. Then vacuum seal them and cook them sous vide @129°F / 53°C for 2 hours and your lobster tails @140°F / 60°C for 1 hour.
Step 4
Once done take them out and pat the steaks dry. Get the lobster and again carefully take the meat out of the shell. Using the flamethrower, sear the steaks to give them a nice crust and also lightly sear the lobster while adding some butter to it.

Now all that's left is to serve everything up and enjoy this beautiful LOBSTER & STEAK feast!
