The Classic MEATBALL Sub just got way BETTER!
I love meatball sub and today I want to test the best way to make them. I go everything I learned to make the tastier and most simple way to make this amazing sub. It’s great!
Ingredients
1 lbs ground beef
1 lbs ground pork
4 tbsp ricotta cheese
3 tbsp Red Onions
3 tbsp Parmesan cheese
2 tbsp parsley
1 egg
4 tbsp bread crumbs
Salt
Pepper
Hoagie Rolls
Marinara Sauce
2 tbsp Onion
1/4 lbs Pancetta
1 tbsp Tomato Paste
2 tbsp Balsamic Vinegar
1 tbsp Sugar
1 tbsp oregano
1 tbsp Garlic
2 cups Tomato
Salt
Pepper
Step 1
Start by preparing the meat. In a large bowl add 1 lbs ground beef, 1 lbs ground pork, 4 tbsp of ricotta cheese, 3 tbsp of red onions, 3 tbsp of parmesan cheese, 2 tbsp of parsley, 1 egg, 4 tbsp of bread crumbs and salt and pepper to taste.
Step 2
Mix everything well to combine and then add some freshly minced garlic and again mix well. Shape the meat into nice sized meat balls and then place them on a tray.
Step 3
Give them a nice sear with the flamethrower to make sure that the crust helps them keep their shape when you put them in the vacuum bag for sous vide.
Step 4
Cook the meat balls sous vide @165°F / 74°C for 1 hour. While that's cooking make your marinara sauce. In a pan cook up 1/4 lbs of chopped pancetta, then add 2 tbsp of diced onions and 1 tbsp of minced garlic and mix well.
Step 5
Let it cook under medium - low heat and then add 2 cups of tomato sauce and mix. Then add 1 tbsp of tomato paste, 2 tbsp of balsamic vinegar, 1 tbsp of sugar, 1 tbsp of oregano, salt and freshly ground pepper, then finish it with a bit of olive oil.
Step 6
Let the sauce reduce until you're happy with the consistency. All that's left is to add the meatballs with some marinara sauce and whatever cheese you like to the bread and toast everything up together. Serve and enjoy your amazing MEATBALL SUBS!
